Fiber Chocolate Chip Muffins

4-5 Ripe bananas

1/3 Maple syrup

1/3 Olive oil

2 Tbsp unsweetened almond milk (oat milk or cashew milk)

2 Eggs

2 Cups of all-purpose or whole wheat, or almond flour

1 Tsp baking powder

4 Tbsp fiber (chia seeds or @benefiber)

Optional: add semi-sweet, dark chocolate chips or 1 Tbsp of hazelnut chocolate scooped and dropped in the middle of muffin cup before baking.

Bake at 350 degrees for 20min.
